Lamb and Chicken Meatloaf

Meatloaf is a dish of meat mixed with other ingredients.
This is a traditional food for the Easter.

  • Wash well all organs and leave them for 15 minutes in water with vinegar (three parts water and a vinegar portion) to remove the lamb's odor.
    Then, boil all organs of lamb and chicken plus the chicken breast for 30 minutes.
    When all meat is boiled, let it cool and cut it in square.
  • Meanwhile, prepare the all green stuff. Cut it, but medium cuted in a big bowl.
    Then put in the bowl the cuted meat (the chicken breast and organs), the 3 eggs (not the boiled ones), flour, salt and pepper
    Mix everything well, and taste the mixture to see if is enough salt and pepper.
    Boil the other 3 eggs.
  • Without caul fat
  • Grease the tray with butter or oil.
    Then, put a half of meat with greenery mixture in the tray and then add the 3 boilled eggs.
    Then put the other half of mixture.
    In the end beat 1 egg and grease the surface of mixture with the beaten egg.
  • With caul fat
  • Grease the tray with butter or oil.
    Put in the tray the caul fat leaving the edges out.
    Then, put a half of meat with greenery mixture in the tray, on the caul fat and then add the 3 boilled eggs.
    Then put the other half of mixture.
    In the end cover the mixture with the edges of the caul fat.
